Jam vs Canned Fruit: Choosing for Fruit Tea
| Dimension | Jam / puree | Canned fruit |
|---|---|---|
| Flavour | Concentrated fruit flavour, full aroma | Keeps the fruit pieces, light and juicy |
| Shelf life | 12-24 months (refrigerate after opening) | 12-18 months |
| Cost | Medium (a little goes a long way) | Lower (higher water content) |
| Consistency | High (stable batch to batch) | Medium (piece size varies) |
| Best for | Fruit-tea bases, cheese-foam fruit flavours, syrup mixing | Fruit pieces, chewy toppings, replacing fresh fruit |
How to choose
For fruit-forward products — fruit-tea bases, flavoured lattes — use jam or puree: aroma and consistency are its strengths. For fruit-piece-forward products — mango pomelo sago, fruit bowls, toppings — use canned fruit: the fruit form and the chew are its strengths. Most stores use both together.
Buying notes
With jam, look at sugar-content stability and whether it contains flavourings or colourants — the shorter the ingredient list, the better. With canned fruit, look at the solid content (50% or more is advisable) and whether preservatives are listed: properly canned products keep by the canning process itself and need no preservatives.
